Duchess potatoes, Anna potatoes, and Macaire potatoes!
, traditionally a French creation, are made up of mashed potatoes, along with egg yolk, butter, salt, pepper, and additional spices, and then molded into different shapes before being baked in the oven. Duchess Potatoes
another French twist, are very thin, layered potatoes which are then baked in the oven to a mashed perfection, while still keeping their sliced and round shape! Anna Potatoes,
on the other hand, are potato pancakes that keep the soft, mashed texture that we love! Macaire Potatoes
These classic recipes can be used with different types of potatoes to give them more nutritional benefits. Use yams or sweet potatoes for example, to get the most nutritional punch for your spuds!
Now let’s go over some purple sweet potato
1. This starchy, root vegetable is
filled with nutrients like Vitamins C and A, potassium, iron, and fiber!
Just one serving (one cup) of this purple veggie contains 40% of your daily recommended dose of Vitamin C, 13.5% of your daily potassium, and 27g of your daily recommended carbohydrate intake. Not to mention they are rich in antioxidants like anthocyanins which are responsible for providing the deep, vibrant purple color of these potatoes!
2. Purple sweet potatoes have a starch make-up that promotes healthy gut bacteria, which then
supports a healthy gut and good digestion.
Certain bacteria found in this starchy vegetable like
Bifidobacteria help to breakdown the complex carbs present in potatoes and legumes. This breakdown between beneficial bacteria and complex carbs makes for smooth digestion and a strong stomach lining!
3. The flavonoids in purple yams may help to
manage blood sugar levels, making them an ideal food for diabetics.
On the glycemic index scale which ranges from 0-100, purple sweet potatoes sit on the low end with the score of 24. This means that the carbs are broken down at a slow rate which allows your body to avoid spiking in blood sugar levels, and instead remain at a more balanced, stable energy.
